Chicken a la YUM...

Just thought I'd share one of the meals that I make LOTS in the summer! It is perfect if you don't have a lot of time or just want a light, but DELICIOUS dinner.


IT IS SO SIMPLE! All you do is grill one chicken breast per person. While they are cooking, place as much mixed lettuce on each plate as you'd like, sprinkle on a tablespoon of sliced almonds per person and split a can of mandarin pieces, drained between the plates. Drizzle each salad with a Tablespoon of low fat honey mustard salad dressing and top with grilled chicken!


As the english would say - SCRUMMY!!!
